Here’s a tasty recipe that can be made ahead and enjoyed after the game. You may freeze it for up to a month before baking. Just defrost and bake.
12 lasagna noodles, cooked and drained. Toss with a little olive oil to keep them from sticking.
1 (10-oz.) package chopped spinach, thawed and squeezed dry
2 tbsp. green onion, chopped
2 cups ricotta cheese
1/4 cup parmesan cheese
1/2 tsp. salt
1 tsp. italian seasoning
1 tsp. garlic powder
1 egg, slightly beaten
1 (14-oz) can pasta sauce
1 cup mozzarella cheese, shredded
Preheat oven to 350 degrees. Mix together all ingredients except lasagna noodles, mozzarella cheese and pasta sauce. Spread 1/3 cup pasta sauce in bottom of 9 x 13-inch baking dish. On a cutting board, lay each lasagna noodle out flat. Spread about 2 to 3 heaping tablespoons of cheese mixture onto each noodle. Spread to cover the entire noodle. Roll up and place seam side down into baking dish. Cover roll ups with remaining sauce and sprinkle with mozzarella cheese. Bake uncovered for 30 to 35 minutes.

So easy and really good. I like this better than reg lasagna. This just is easier to manage. And it looks prettier with a salad and bread.

You definately have to be on my fantasy hockey games next season. We are doing playoffs now in one and I’m in 1st place in my division and the other one i’m in danger of not making the playoffs next week! Always fun!
