I’ve been so desperate for hockey that I’ve been reduced to watching old programs on the NHL network. So I decided to cook my way through until the 15th of September and hope that training camp will begin. I comforted my self with a nice easy recipe that requires few ingredients and from start to finish takes about 30 minutes. Now that sounds like something we could make just before a game and enjoy after the game. I’m tired of sitting around waiting so….. Lets Cook.
Ingredients:
16 oz. can crab meat
1 egg
3 tbsp. mayonnaise
1 tbsp. Dijon mustard
1 tsp. dry mustard
1 tbsp. Worcestershire sauce
1 tsp. lemon juice
3/4 cup bread crumbs (panko is the best)
1 tsp. Old Bay seasoning
Directions:
Pre heat oven to 400 degrees F. Mix all ingredients except crab and bread crumbs together in a medium bowl. Gently fold in crab meat and bread crumbs. Shape in to patties about 1/2-inch thick. Place on a foil covered baking pan. Bake for 15 minutes until golden brown. Serve with skillet roasted potatoes and mushrooms.
A nice wedge of lettuce drizzled with thousand island dressing and a glass of white wine turns this 30 minute meal into a gourmet feast. Enjoy
